Are you using a blindstitch or similar foot or simply turning up and sewing the edges? Turning up and sewing has been fine for the type of work I've been doing so far (I'm good at even topstitching, so those sorts of hems look decent to begin with, and the ones on Randy's jacket are going to be covered with trim anyway), but I would like to learn to use the nifty hemming foot sometime in the future.
I'm using a normal foot, though I have hem feet and blind hem feet (and no idea how to use either!) I use the hem stitch on my machine, which looks like this (bad ASCII art ahead!) www\/www\/www
You fold up your hem, then flip it back about 1/4 inch or less so that the bottom edge of your hem is exposed. You stitch along this edge, and the bottom of the big V stitch should just nip the folded fabric. This has the advantage of finishing your hem with the little zigzags, and it makes a blind hem at the same time.
