From the FFs I played enough to develop favorites:

Final Fantasy 7

Not much to say here except I liked having Red XIII and Vincent in my party.

Final Fantasy 8

Given my proclivities, one might expect me to answer with Laguna, Kiros, and Ward, but the game doesn't let you play with them long enough for me to consider them a favorite. When it came to final battles, I usually chose Squall, Irvine, and Quistis, cast Aura on everyone, and let them go crazy. Between Squall spamming Renzokuken, Irvine using Pulse ammo, and Quistis using Shockwave Pulsar, the battle was usually over quickly. I never got the hang of Zell's Limit Break, Selphie's was too unpredictable, and you lose control of Rinoa late in the game when she uses hers.

Final Fantasy X

My favorite party ended up being whoever I could obtain Celestial Weapons for. That meant Lulu, Yuna, and Auron, mostly. (DODGING LIGHTNING BOLTS ARGH) I tried mightily to get Caladbolg unlocked, but even my husband couldn't win the wobbly chocobo race, and he is a master at Gran Turismo.

Final Fantasy XII

My go-to party was usually Basch tanking it, with backup from Balthier - usually not equipped with a gun, because it was too slow - and either Fran or Ashe as the third member. Something about either Fran or Balthier with a katana was fantastic, and I was very proud to have obtained the Tournesol.
